Fermentation culture exists along with Japanese history from very early times.
It is said that human beings lived a life, eating preserved food in caves where temperature and humidity were stable.

The various shapes of copper cubes in the dark heavy cave are the image of floating koji-mold, of a space, where visitors would feel a considerable energy from invisible small microorganisms.

Visitors would feel relaxed in a space, as if traveling to the age of the gods, and with this space, hoping they would enjoy change of the atmosphere over time.

The shop is open at Hiranomachi, Himeji city near “Aqurie Himeji” (Himeji culture convention center), a brand-new base of culture art in Harima region opening this autumn, a 10-miniute walk from World Heritage, “Himeji castle”.

The concept of this new shop is “a brewery in a cave where koji mold is floating”.
A couple of glittering cubes are stuck and floating in the completely dark space, where the whole walls are covered with mortar totally, the sight of the place resembles a jet-black cave and a bundle of lights glowing from the cave.
The joints are equally set at the mortar walls, and the wall is design to feel in a way that, at a glance, there is a no doorway, but a hidden door. The ratio of the whole space is equally set in 70% intervals, having a regularity, the atmosphere of feeling in Japanese good old days architecture is expressed.

Just being at the entrance takes to the past, to the ancient times. Furthermore, to the unknown future, transcending time and space, time-travel. It is like falling under illusion of becoming floating koji mold in the nature.
In order to spot naturally inductively, of course the products, but also staff who hand over the products to customers at the floating copper plate cube in the wall, illumination is beautifully arranged. At night a different atmosphere appears.
The cover of a garden tree, the bench, and the lighting express koji mold, which is the base fermentation.
Keeping the flame of enthusiasm to creating products burning forever and ever, thinking back to the times along with the color change of the copper plate, never fading like eternal love given by mother, special and valuable customers want to present to their special ones naturally, brand-new fermented food meeting with the current times, from this place to the world will be provided.
